Everything is more fun upside down... right? Okay maybe not everything. One thing that is more fun upside down is apple pie. It's so good you'll never believe that you use store bought pie crust. But you do. It goes quick so if you want more than one piece don't invite anyone over to your house, they won't want to leave until the pie is completely gone.
Upside Down Apple Pie
(Original recipe from the Noble Pig)
6 tbsp. butter, melted
1/2 cup packed brown sugar
1/2 cup chopped pecan
2 refrigerated pie crusts
1 cup sugar
1/3 cup all purpose flour
3/4 tsp. cinnamon
1/4 tsp. apple pie spice
5 large Granny Smith apples, peeled, cored & cut into 1/2 inch slices
Coat a deep-dish pie plate with nonstick cooking spray and line it with parchment paper. Spray the paper with cooking spray as well. In a small bowl combine 4 tbsp. of melted butter, brown sugar, and pecans. Mix well and spread evenly over the bottom of the pie plate but on top of the parchment. Place one of the crusts in the plate, pressing it firmly against the nut mixture and up the sides of the plate. Set aside.
In a large bowl, combine granulated sugar, flour, cinnamon and the remaining 2 tbsp. of melted butter. Mix well. Add apples and toss gently to coat. Spoon into the prepared pie crust.
Place the second crust over the apple mixture. Trim and fold edges together to seal and cuts slits in the top crust to act as a vent while baking.
Bake 1 to 1-1/4 hours or until crust is golden brown in a 375 degree oven. Make sure to place a cookie sheet on the bottom oven rack to catch any possible drips from the pie.
Let the pie cool for about 5 minutes and then place a plate (that is larger than the pie) on top and flip over. It will still be warm so make sure you use oven mitts. Remove the pie plate and gently lift the paper. Allow the pie to cool. Serve slightly warm or at room temperature.
Too good for words...
End result!
